- Bring a big pot of water, seasoned generously with salt, to a rolling boil. Add 8 ounces of dried capellini or angel hair pasta and cook according to the package directions until al dente, about 3 to 4 minutes. Thinly slice 2 garlic cloves, grate 3 ounces of Parmesan cheese, and zest and juice 1 large lemon.
- Reserve 1 cup of pasta water before draining the pasta.
- Return the pot to medium heat, add 1/4 cup olive oil, and heat until shimmering. Add the garlic and sauté for 1 to 2 minutes until fragrant. Reduce heat to low, add the drained pasta, and gently toss to coat with the oil.
- Mix in 1/2 cup of reserved pasta water, 1 teaspoon kosher salt, 1/2 teaspoon red pepper flakes, and 1/4 teaspoon black pepper. Toss gently until well combined. If the pasta appears dry, add additional pasta water, 1 tablespoon at a time.
- Remove from heat and stir in the Parmesan, lemon zest, and lemon juice. Toss to combine. Serve with extra grated Parmesan and red pepper flakes, if desired.
