Prepare the Chicken
Cook the Chicken
- Gently warm olive oil in a skillet on medium heat.
- Cook the breaded chicken breasts for 4-5 minutes per side, until they are golden brown and fully cooked (internal temperature should reach 165°F).
- Once cooked, remove and let them rest on a paper towel to absorb excess oil.
Assemble the Sandwich
- Preheat your oven's broiler.
- On a baking sheet, place the fried chicken breasts and top each with marinara sauce, mozzarella cheese, and pepperoni slices.
- Broil for 2-3 minutes until the cheese melts and the pepperoni crisps up.
- Toast the ciabatta rolls lightly in the broiler as well.
Add Finishing Touches
