It will take about 4.5 hours total to prepare your Yasso bars. This is the total preparation time, active preparation time (mixing, shaping and dipping), and inactive preparation time (freezing) combined. The preparation was relatively easy, the hardest thing to do is show patience to make the best Yasso bars.
Active vs. Inactive Preparation
Active preparation time is about 30 minutes. You’ll spend about 15 minutes on active mixing and shaping, and another 15 minutes melting and dipping the chocolate. Inactive preparation time is about 4 hours; that’s mostly freezing the yogurt base into the creamy-crisp bar.
Cooking Time: Freezing Perfectness
Freezing Time for Perfect Texture
The yogurt base, once flattened into shape, will need to freeze for a minimum of 3-4 hours until it has a hard, workable texture. While three hours is a good length of time to freeze yogurt, four hours is better because this will allow the Yasso bars to have a workable firmness when dipped in chocolate, while still giving you the creamy bite you expect.
Chocolate Layer Hardening
After you dip your Yasso Bars in chocolate, give the bars about a 10-minute freeze to harden your chocolate shell. This will give your Yasso bars a reflective shine and give the bars a nice texture contrast from the crisp exterior to the creamy inside.

Ingredients for the Yogurt Base
✅ 1 cup Greek yogurt (full-fat or dairy-free, thicker consistency)
✅ ½ cup almond butter (smooth, thick, coffee flavored)
✅ ¾ tsp vanilla (extract, pure)
Yasso bars start with a creamy yogurt base, and Greek yogurt, strained to thick and creamy perfection, gives both creaminess and protein. The almond butter gives it even more richness, while the vanilla extract provides that subtle flavor nuance. The plan here is to create Yasso bars that truly blend flavors, not simply yogurt on a stick.
Ingredients for the Chocolate Coating
✅ 1 cup dairy-free chocolate chips (ideally, refined-sugar free)
✅ 2 tbsp coconut oil (virgin, for a silky melt)
A shiny chocolate shell draws the most admiration from people. Having dairy-free chocolate chips allows almost everyone to enjoy them. And coconut oil makes it just thick enough to melt as you bite into it, but thin enough so your first bite gives a satisfying snap!

✅ 1 tbsp maple syrup (for flavor, very optional)
✅ ¼ crushed quinoa crispies (for crunch, very optional)
The optional additions give the user an opportunity to customize their bars according to their taste. For example, the maple syrup ideally takes the tangy edge off the yogurt and the quinoa crispies add a fun crunch that adds a crazier texture experience like many of the popular Yasso whimsical flavors.

Mix the Yogurt Base
In a very large bowl, add Greek yogurt, almond butter, and vanilla extract. Mix together until smooth and creamy. The texture should be very smooth and homogenous. If the texture looks watery, you may want to mix in a little bit more of the almond butter. Taste the yogurt base and if a sweeter yogurt base is desired you can add maple syrup.
Shape and Freeze the Bars
Line a baking tray with parchment paper. I used a standard baking tray. With a 2-inch cookie scoop, scoop out 5 mounds of yogurt base onto the parchment-lined baking tray. Take a popsicle stick and carefully push it down into the center of each mound of yogurt base. Pull the mold downwards gently while holding the popsicle stick in the center to help the yogurt base stick to the popsicle stick.
With a spoonbody or other utensil to break up the mound of yogurt base, work the yogurt base around the popsicle stick to create an oval shape. Place in the freezer for about 3 to 4 hours or until the Yasso bars are completely frozen and set.
Dipping in chocolate
In a microwave-safe bowl add coconut oil and chocolate chips. Heat for 20 seconds at a time, stirring in between until smooth and fully melted.
Note: Do not overheat chocolate, you need to keep the sheen in the melted chocolate.
Dip each frozen Yasso bar into the melted chocolate, shaking off the excess, and then placing back onto the parchment lined tray.
Final Freeze and Storage
Put the dipped bars in the freezer for another 10 minutes to set the chocolate.
Once set, store in an airtight container in the freezer (with parchment between layers, to prevent sticking) for up to 1 month. Serve chilled, for maximum creaminess!

Choosing the right yogurt
The best yogurt to use is thick, full-fat Greek yogurt, or a thick, dairy-free yogurt such as Kite Hill. Avoid watery yogurts, to get the thick creaminess you’ll want. If needed, you could also strain your yogurt through cheesecloth to get a thicker yogurt!
Customization & flavor ideas
You can customize flavor by adding mix-ins – examples include crushed berries, cocoa powder, or mint extract. Chocolate flavors can be kicked up a notch by adding a pinch of sea salt, and citrus zest can add an additional tangy zing!
Storage and Serving Suggestions
To amplify the creaminess of your Yasso bar to the fullest, it would be best if you thaw it for approximately 2 minutes prior to consumption or serving. It is best to store this item in small batches if you want it to hold its flavor profile.
