This tasty pepper steak, served with a side of fluffy white rice, is a breeze to make with ingredients you probably already have in your pantry. My mother found this recipe long ago, and it quickly became one of my signature dishes, though I’ve never been able to track down the original source.

Mixing bowl – For whisking together the marinade (soy sauce, sugar, cornstarch, ginger) and coating the steak.

Whisk – To ensure the marinade is smooth and well-blended.

Tongs or spatula – To stir and flip the steak and vegetables during cooking.

Measuring cups and spoons – For accurately measuring ingredients like soy sauce, sugar, oil, and cornstarch.

  • 1 pound beef top sirloin steak
  • ¼ cup soy sauce
  • 2 tablespoons white sugar
  • 2 tablespoons cornstarch
  • ½ teaspoon ground ginger
  • 3 tablespoons vegetable oil, divided
  • 1 red onion, cut into 1-inch squares
  • 1 green bell pepper, cut into 1-inch squares
  • 2 tomatoes, cut into wedges
Instructions
    1. Slice the steak into ½-inch strips, cutting across the grain for tenderness.
    2. In a bowl, whisk together the soy sauce, sugar, cornstarch, and ginger until smooth and the sugar has dissolved. Add the steak strips to the mixture, ensuring they’re well-coated.
    3. Add 1 tablespoon of vegetable oil to a wok or large skillet and heat it over medium-high heat.. Cook the steak strips in batches to avoid overcrowding, stirring frequently until they’re browned (about 3 minutes per batch). Transfer the cooked steak to a bowl and repeat with the remaining meat, adding more oil as necessary.
    4. Return the steak to the wok and toss in the red onion. Stir everything together for about 2 minutes, or until the onion starts to soften. Add the green bell pepper and continue stirring until the peppers become bright green and slightly tender, around 2 minutes.
    5. Finally, add the tomato wedges, stirring everything together to combine and let the flavors meld. Serve hot, with your favorite side of boiled white rice.
