How to Make Refreshing Spearmint Tea

spearmint tea:Traditional Moroccan Mint Tea 1

Traditional Moroccan Mint Tea(spearmint tea), known as Atay Bi Na'na', is a cornerstone of Moroccan culture. This aromatic and refreshing drink symbolizes hospitality and is often served to guests. Its distinctive taste comes from a blend of Chinese gunpowder green tea, fresh mint leaves, and sugar.

Typically enjoyed throughout the day, it’s a ritual as much as a drink, steeped in centuries of tradition. Prepared in a silver teapot and poured into small glasses from a height, the tea develops a light frothy layer, enhancing its aesthetic and taste.

Whether shared among friends or savored solo, this tea is a perfect balance of sweetness and herbal freshness that transports you straight to the heart of Morocco.

Ingredients
  • 2 tablespoons Chinese gunpowder green tea
  • 1 large handful of fresh mint leaves (about 20-30 sprigs)
  • 4 tablespoon granulated sugar (adjust to taste)
  • 4 cups (1 liter) boiling water
Instructions
    1. Rinse the Tea: Add the green tea to a teapot. Pour about ½ cup of boiling water over it, swirl gently, and discard the water to rinse the tea.
    2. Brew the Base: Add 2 cups of boiling water to the teapot. Let the tea steep for 2-3 minutes.
    3. Add Mint and Sugar: Add the fresh mint leaves and sugar directly into the teapot.
    4. Combine Flavors: Pour the remaining boiling water over the mixture. Let the flavors infuse fully by steeping it for 5 more minutes.
    5. Mix and Serve: To mix the flavors, pour the tea into a glass and return it to the pot. Repeat this 2-3 times.
    6. Serve: Pour into small glasses from a height to create a frothy layer. Serve hot.
