Ingredients
  • 1 large head of esca-role (about 1 lb), cleaned and chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic, thinly sliced
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and black pepper, to taste
  • 1/2 Juice of lemon (optional, for added flavor)
  • Optional garnish: grated Parmesan cheese or chopped fresh parsley
Instructions
    Prepare the Esca-role:
  1. Esca role 1
      • Wash the esca-role thoroughly, as it can hold a lot of grit. Roughly chop the leaves and set aside.
  2. Heat the Oil and Garlic:
      • Heat the olive oil in a large pan or skillet over medium heat.Add the sliced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Cook the Esca-role:
    • Add the chopped escarole to the pan. Stir well to coat the leaves with the oil and garlic. Add salt, black pepper, and red pepper flakes, if desired, for seasoning.
      • Sauté the escarole for about 5-7 minutes, stirring occasionally, until the leaves wilt and become tender.
  4. Add Lemon Juice and Serve:
      • If desired, squeeze lemon juice over the escarole to add brightness. Adjust the seasoning if necessary.
      • Remove from heat and transfer the sautéed escarole to a serving dish.
  5. Garnish (Optional):
      • Garnish with grated Parmesan cheese or chopped fresh parsley for added flavor and a touch of color.
