  • 2 cups rotini pasta
  • 1 lb (450g) boneless, skinless chicken breast, diced
  • 1 tbsp olive oil
  • 1 cup broccoli florets
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup sliced mushrooms
  • 1/2 cup diced onion
  • 1 can (10.5 oz) cream of mushroom soup (low sodium, if preferred)
  • 1/2 can chicken broth
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Fresh parsley for garnish
Instructions
    1. Cook the Pasta: In a pot, cook rotini according to package instructions until al dente. Drain and set aside.
    2. Sauté the Chicken: Warm olive oil in a large skillet over medium heat. Add the diced chicken, seasoning with salt, pepper, and garlic powder. Sauté until golden and fully cooked, about 6–8 minutes. Remove chicken from the skillet and set aside.
    3. Sauté Vegetables: In the same skillet, add diced onions, bell peppers, mushrooms, and broccoli. Sauté until the vegetables are tender, about 4–5 minutes.
    4. Combine Ingredients: Add cooked chicken back to the skillet along with the cooked pasta. Stir in the cream of mushroom soup and chicken broth. Add Italian seasoning and adjust salt and pepper to taste.
    5. Add Cheese: Sprinkle shredded cheddar cheese over the top, cover the skillet, and let it cook for another 5 minutes until the cheese melts and the casserole is creamy.
    6. Serve: Garnish with fresh parsley and serve warm.
