2 ½tsp baking powder
½tsp salt
1cup unsalted butter, softened
2cups granulated sugar
4 large eggs
2tsp vanilla extract
1cup whole milk
Food coloring (variety of colors)
For the Frosting:
1cup unsalted butter, softened
4cups powdered sugar
3tbsp milk
1tsp vanilla extract
Food coloring (optional)
Instructions
Preheat Oven: Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans. Line with parchment paper for easy release.
Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Cream Butter and Sugar: In a large bowl, cream the butter and sugar until light and fluffy (about 2-3 minutes).
Add Eggs and Vanilla: Beat in the eggs one at a time, then add vanilla extract.
Combine Wet and Dry: Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
Divide and Color: Divide the batter evenly among bowls (one for each color). Add food coloring to each bowl and mix until vibrant.
Bake: Pour the colored batter into the prepared pans. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
Prepare Frosting: In a bowl, beat butter until creamy. Gradually add powdered sugar, milk, and vanilla until smooth. Add food coloring if desired.
Assemble Cake: Layer the cakes with frosting in between. Frost the outside and decorate as desired.
