Searing it in a pan also creates the perfect opportunity to make a buttery, lemon-infused sauce to pour over the fish.

To round out this simple fish dish, serve it with a green salad or vegetables, and perhaps some bread or rice to soak up that delicious sauce. Here's the easiest way to cook mahi mahi.

Slice and juice the lemon

  1. Thinly slice half of the lemon, and juice the other half—you should have about 1 1/2 tablespoons of juice. Set both aside.

Season the mahi mahi

  1. Pat the fillets dry with paper towels, then season with 1 teaspoon of salt and freshly ground pepper

Pan-sear the mahi mahi

  1. Heat the olive oil in a large cast iron or nonstick pan over medium-high heat until it just begins to smoke, about 3 to 5 minutes. Place the mahi mahi in the pan and cook without moving until the bottom is deeply browned and the sides are cooked slightly past halfway, about 4 minutes. Flip the fillets and cook for another 2 to 4 minutes until the fish is cooked through and flakes easily. Transfer the fillets to a serving dish

Prepare the lemon-garlic sauce

  1. Lower the heat to medium-low and add the lemon juice, garlic, and remaining 1/4 teaspoon of salt. With a wooden spoon, scrape away any browned bits from the bottom of the pan.

Incorporate the lemon slices and butter

  1. Add the lemon slices, then stir in the butter, one piece at a time, letting each melt almost fully before adding the next.

Finish the sauce
