Ingredients
8oz (225g) spaghetti
1tbsp olive oil
1medium onion, finely chopped
2 cloves garlic, minced
1tbsp fresh ginger, grated
1tbsp green curry paste
1can (14 oz) coconut milk
1/2cup chicken or vegetable broth
1tbsp soy sauce or tamari
1tsp brown sugar
1/2tsp lime zest
2tbsp lime juice
1/4cup fresh basil, chopped
1/4cup cilantro, chopped
1cup cooked chicken, shrimp, or tofu for protein(Optional)
Salt and pepper to taste
Instructions
Cook the spaghetti:Fill a large pot with water, add salt, and bring it to a boil. Cook the spaghetti according to package directions until al dente, then drain and set aside.
Prepare the curry sauce: Heat olive oil in a large skillet over medium heat. Stir in the chopped onion and cook for 3-4 minutes, or until it becomes tender and translucent.
Add garlic and ginger, cooking for another 1 minute until fragrant.
Stir in the green curry paste and cook for 1-2 minutes to release the flavors.
Pour in the coconut milk, chicken or vegetable broth, soy sauce, brown sugar, and lime zest. Stir to combine and bring the sauce to a gentle simmer. Let it cook for 5-7 minutes, allowing it to thicken slightly.
Add lime juice and adjust seasoning with salt and pepper to taste. If using, add protein (chicken, shrimp, or tofu) at this point.
Toss the cooked spaghetti into the curry sauce, mixing to coat the noodles evenly.
Remove from heat and garnish with chopped basil and cilantro before serving.
