Ingredients
  • 1 ¾ cups gluten-free all-purpose flour
  • ½ cup almond flour
  • ½ teaspoon xanthan gum (if not included in flour mix)
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • cup coconut sugar or brown sugar
  • 5 tablespoons unsalted butter or coconut oil, softened
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup milk (dairy or non-dairy)
Instructions
    1. Preheat Oven: Set your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
    2. Mix Dry Ingredients: In a bowl, whisk together gluten-free flour, almond flour, xanthan gum, baking soda, baking powder, cinnamon, and salt.
    3. Cream Butter & Sugar: In another bowl, beat softened butter and sugar until creamy. Add honey and vanilla extract, mixing until smooth.
    4. Combine Wet & Dry: Gradually add the dry mixture to the wet ingredients, alternating with milk, until a dough forms.
    5. Roll Out Dough: Place the dough between two sheets of parchment paper and roll to about ⅛ inch thick.
    6. Cut & Shape: Cut into rectangles or desired shapes and transfer to the baking sheet. Use a fork to poke holes for the classic graham cracker look.
    7. Bake: Bake for 12-15 minutes until edges are golden. Cool completely on a wire rack before serving.
