For Sushi Rice:
1cup sushi rice
1 ¼cups water
2tbsp rice vinegar
1tbsp sugar
1tsp salt
For Filling:
8 medium shrimp (peeled, deveined, and fried)
½ cucumber, julienned
1 avocado, thinly sliced
1tbsp tobiko or masago (optional)
For Tempura Batter:
½cup all-purpose flour
½cup ice-cold sparkling water
¼cup cornstarch
For Spicy Mayo:
4tbsp mayonnaise
2tbsp Sriracha sauce (to taste)
Assembly:
4 nori sheets
1tbsp sesame seeds
Instructions
Make the Sushi Rice:
Rinse sushi rice until the water runs clear, then cook in a rice cooker or pot with water.
Once cooked, season rice with rice vinegar, sugar, and salt. Stir to combine and let cool.
Prepare the Tempura Shrimp:
Combine flour, cornstarch, and sparkling water to make a light tempura batter.
Heat oil in a pan over medium-high heat.
Dip shrimp in the batter and fry until crispy. Drain on a paper towel.
Mix the Spicy Mayo:
In a small bowl, combine mayonnaise and Sriracha to taste. Adjust spice level as desired.
Assemble the Roll:
Position a nori sheet on the bamboo mat, keeping the shiny side facing down against the surface.
Cover the nori with a light, uniform layer of sushi rice, and then scatter sesame seeds on top.
Turn the nori over so the rice side is facing downward.
Place tempura shrimp, cucumber, avocado, and a touch of spicy mayo on the center line of the nori.
Carefully roll up using the bamboo mat, pressing firmly to create a tight roll.
Slice and Serve:
Cut each roll into bite-sized pieces, garnish with tobiko if desired, and enjoy with soy sauce, pickled ginger, and wasabi on the side.
