Ingredients
1box (15 oz) gluten-free cake mix (any flavor)
1tub (8 oz) Cool Whip (thawed)
1 large egg
1cup powdered sugar
Instructions
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, combine the gluten-free cake mix, Cool Whip, and egg. Mix until smooth and sticky.
Place the powdered sugar in a shallow bowl.
Using a spoon or cookie scoop, drop small dough balls (about 1 tablespoon each) into the powdered sugar. Roll them around until fully coated.
Place the powdered sugar-coated dough balls onto the prepared baking sheet, ensuring there is about 2 inches of space between each one.
Bake for 10-12 minutes or until the cookies are set and slightly golden on the edges.
Let the cookies rest on the baking sheet for 2 minutes, then carefully move them to a wire rack to finish cooling completely.
