Ingredients
  • 1 clove garlic, peeled
  • 2 pounds flank steak, cut into 1/2-inch pieces
  • 1 cube chicken bouillon
  • 2 (15.5-ounce) cans pinto beans
  • ½ onion, chopped
  • 6 tablespoons fresh cilantro, chopped
  • Ground black pepper, to taste
  • 1 lime, cut into 6 wedges
  • 6 slices bacon
  • 3 cups water
  • 4 fresh tomatillos, husked
  • 3 serrano chile peppers, seeded and chopped
Instructions
  1. Carne en su Jugo

    In a large skillet, cook the bacon over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels, crumble, and set aside.

    1. In a small saucepan, combine the water, tomatillos, serrano peppers, and garlic. Bring to a boil, then cover

    and simmer for 10 minutes. Remove from heat and let cool. Pour the mixture into a blender and blend until smooth. (Alternatively, you can skip simmering and blend raw tomatillos, peppers, and garlic with water and some browned flank steak.)

    • Heat a nonstick skillet over medium-high heat. Add the flank steak and cook, stirring until fully browned. Add the tomatillo mixture to the beef and bring it to a boil. Stir in the chicken bouillon, then reduce the heat to medium. Cover and simmer until the steak is tender, about 30 minutes to 1 hour.

    • Meanwhile, heat the pinto beans in a saucepan over medium heat until warmed through. Lower the heat to keep them warm until ready to use.

    1. Stir the crumbled bacon and pinto beans into the flank steak mixture. Divide the mixture among 6 bowls, garnishing each with chopped onion, cilantro, black pepper, and a lime wedge. Enjoy!
