1lb large shrimp, peeled and deveined
3 guajillo chiles, seeded
3 chiles de árbol, seeded (adjust for spice level)
1 Roma tomato, chopped
2 cloves garlic, minced
1/2 onion, chopped
1tbsp ketchup
1/2cup water
2tbsp olive oil
Salt and pepper to taste
Fresh lime wedges, for garnish
Instructions
Prepare the Sauce: Boil the guajillo and árbol chiles for 5 minutes until soft. Drain, then blend with tomato, garlic, onion, ketchup, and water until smooth.
Cook Shrimp: Heat olive oil in a skillet over medium heat. Add shrimp, season with salt and pepper, and cook until pink (about 3 minutes). Remove and set aside.
Combine with Sauce: Pour sauce into the same skillet, simmer for 5 minutes. Add shrimp back, coating well, and cook for another 2-3 minutes until flavors meld.
