1lb (450g) beef chuck or brisket, cut into cubes
2tablespoons vegetable oil
1 medium onion, sliced
3 garlic cloves, minced
1inch piece of ginger, sliced
4cups beef broth
2tablespoons soy sauce

Instructions
Warm vegetable oil in a large pot over medium heat. Add the beef cubes and sear them until browned on all sides, taking about 5-7 minutes.
Remove the beef and set aside. In the same pot, add onion, garlic, and ginger. Sauté until fragrant, about 3 minutes.
Add the beef back to the pot, then pour in beef broth, soy sauce, oyster sauce, rice vinegar, five-spice powder, black pepper, and star anise. Stir to combine.
Bring the soup to a boil, then reduce heat and simmer for 45 minutes, until the beef is tender.
Add the bok choy and noodles to the soup and cook for 5-7 minutes, until the noodles are tender and the bok choy is wilted.
Taste and adjust seasoning with more soy sauce or vinegar, if needed.
Ladle the soup into bowls and garnish with green onions and cilantro. Serve hot.
