Description
barramundi
This baked barramundi is paired with a rich lemon-basil butter sauce, perfect for serving over brown rice. Barramundi has become a frequent find at my local grocery store, but you could also try this recipe with tilapia for a delicious alternative.

Ingredients
4oz barramundi fillets (Asian sea bass)
1tbsp olive oil (or as needed)
Crumb Topping:
1cup dried bread crumbs
½tsp seafood seasoning (e.g., Old Bay)
½tsp garlic powder
½tsp onion powder
½tsp lemon zest
1pinch dried thyme
Lemon-Basil Butter Sauce:
1cup melted butter
¼cup lemon juice
¼cup white wine
2tbsp fresh basil, chopped (or to taste)
Instructions
Preheat the oven to 375°F (190°C).
Lightly brush the barramundi fillets with olive oil.
Mix the bread crumbs, seafood seasoning, garlic powder, onion powder, lemon zest, and thyme on a plate for the crumb topping. Mix until well blended.
Press each fillet into the crumb mixture to coat thoroughly, then place them on a baking sheet.
Place the fish in the preheated oven and bake for 10 minutes.. Flip the fillets and continue baking for another 10 minutes, or until the fish flakes easily with a fork.
To make the sauce, stir together the melted butter, lemon juice, white wine, and basil in a small bowl until well mixed.
Drizzle the lemon-basil butter sauce over the baked fish before serving.

For a lighter option, you can spray the fillets with cooking spray instead of using oil.
