agua de jamaica

This hibiscus drink, commonly served across Mexico, is refreshing and pleasantly tart, similar to a cranberry tea. You can adjust the amount of sugar to suit your taste. Enjoy!

Ingredients
  • 1 pinch of ground nutmeg
  • 1 pinch of ground allspice
  • ½ cup of chopped piloncillo (Mexican brown sugar cones)
  • 1 ½ cups of white sugar
  • 6 cups of water
  • 2 cups of dried hibiscus petals
  • 1 cinnamon stick
  • 1 pinch of ground cloves
Instructions
  1. Pour 6 cups of water into a large saucepan and bring to a boil. Add the hibiscus petals, cinnamon, cloves, nutmeg, and allspice, then reduce the heat to medium-low. Let the mixture simmer gently until the water turns a deep red, about 30 to 45 minutes.

  2. Add the chopped piloncillo to the hibiscus water and stir until fully dissolved. Let the mixture cool for approximately 15 minutes. Once cooled, strain the warm liquid into a 1-gallon pitcher using a wire mesh strainer, pressing the petals to extract as much liquid as possible before discarding them. Stir in the white sugar until it dissolves, then add enough cold water to fill the pitcher. Serve immediately, or let it stand overnight for the best flavor.

Recipe Tip

If piloncillo is unavailable, add the white sugar as instructed, then adjust the sweetness to your preference using brown sugar or more white sugar.
